Tuesdays At The Table - Easy Chicken Tortilla Bake

Happy Tuesday, ladies!! It's official. I am a Taste of Home junkie! This week's recipe started there...but because I like to change things, ended up a recipe all my own. :-)

Easy Chicken Tortilla Bake

1 lb of chicken breast (cut into bite sized pieces)

1-2 bell peppers (cut into cubes)

1 can condensed tomato soup (undiluted)

1 cup chunky salsa

1/2 cup milk

1 cup shredded cheese of your choice

8 (8 inch) flour tortillas (cut into 1 inch strips)

Dash (or two) cayenne pepper

Salt and pepper to taste

1 tbsp olive oil

In a large skillet, heat oil then saute bell pepper and chicken. This should take 3-5 minutes to cook the chicken.

Add in cayenne, salt and pepper. Mix in soup, salsa, milk, tortilla strips and 1/2 cup of cheese. Empty into a 2 quart casserole dish and cover.

Bake at 400 degrees for a half hour. Uncover, top with remaining cheese and bake for 10-12 minutes.

I served this with steamed broccoli and rice pilaf (though rice and beans would have been better!).

Musical Monday - Uprising & Supermassive Black Hole

I can't believe another weekend flew past that quickly!!

I hope you all had a fun Halloween! Beckett was a good little boy and helped me hand out candy. The girls? Well, they aren't quite as fond of people coming to the door and were spent most of the time hanging in the back yard. (Don't worry...it was nice and warm out!)

Sorry, but I have to vent for a second. You do have rearview mirrors on your cars, right?!?! Yeah...I thought so. I went grocery shopping on Sunday and almost got hit 3 times & run over (while crossing in a crosswalk) TWICE! I totally understand that people are busy - but, GOOD LORD, watch where you are going!! That's it; end of rant. :-)

This week I'm sharing two songs by the same group - Muse. First is Supermassive Black Hole which if you're a Twilight fan, you're already familiar with. The second song is Uprising. You might have heard this on the background of the new V commercials.

Tuesdays At The Table - Pumpkin Chocolate Chip Muffins

Hap, Hap, Happy Tuesday!!

Welcome to all the new contributors! I'm thrilled to see all the new "faces" and recipes. You know how to make a girl feel good. :-) I encourage you all to visit other recipe contributors. You all share such wonderful recipes that I want everyone possible to see them!

This week I'm sharing muffins that I discovered in A Taste of Home's bake sale magazine. I've seen a few different pumpkin muffins, so I sincerely apologize if you've seen this recipe before.

Pumpkin Chocolate Chip Muffins

4 eggs
2 cups flour
1 can (15 oz.) solid pack pumpkin
1 1/2 cups vegetable oil
3 cups flour
2 teaspoons baking soda
2 teaspoons baking powder
1 teaspoon cinnamon
1 teaspoon salt
1 bag (12 oz) chocolate chips

In a large bowl, beat eggs, pumpkin and oil until smooth. Combine dry ingredients and add to pumpkin mixture. Mix well. Fold in chocolate chips. Fill muffin tins 3/4 full and bake at 400 degrees for 16-20 minutes. Let cool 5-10 minutes before moving to cooling rack.

Musical Monday - Great Day To Be Alive

Happy Monday! I hope you all had fabulous weekends!

My weekend was pretty good. :-) Made a batch of cake pops, spent Saturday night at Kirstren's Halloween party (I went as a nurse, in case you were wondering.) and Sunday was relaxing and indulging in my newest Facebook obsession - Sorority Life.

I'm going country on you and sharing Travis Tritt's "Great Day To Be Alive". The song is almost a decade old, but makes me smile every time I hear it.

Something else that makes me laugh?! That would be last weeks' group Hustle on DWTS! Check it out... especially the wigs on the guys. :-)
