Tuesdays at the Table - York Peppermint Brownies

Happy Tuesday, loves!  I hope you all had a fabulous weekend and great start to your week.  :-)


One of my favorite flavors is mint, and I'm sure I'm not alone.  It's so versatile and can be incorporated into so many recipes.  About a month ago, I made these little morsels for a work baby shower.  You all know I don't like to be the center of attention, so the positive feedback from co-workers was a bit overwhelming.

York Peppermint Brownies

Make your favorite boxed brownies...or use my favorite recipe (below)

2 sticks unsalted butter, plus more to butter baking pan
2/3 cup all purpose flour, plus more to flour baking pan
1/2 teaspoon salt
12 ounces good quality semisweet chocolate, coarsely chopped
4 eggs
1 tablespoon vanilla
1 1/2 cups light brown sugar, firmly packed

Preheat your oven to 375˚F. Butter and flour a 9x13 baking pan.  In a medium heatproof bowl set over a pot of simmering water, melt the chocolate and butter, stirring occasionally. Remove from heat. 

Whisk the sugar, vanilla and salt into the chocolate mixture until smooth, then whisk in the eggs. Add the flour and whisk lightly just until smooth. Spread ⅓ of the brownie batter in your baking pan, and place the peppermint patties on top in a single layer, leaving a narrow border on all sides. Pour the rest of the batter over the patties, and smooth out the surface.

Bake 45-55 minutes, until a toothpick in the center of the pan comes out clean or with a few moist crumbs.

I love brownies...but these suckers are molten lava due to the minty goodness that is the center of the peppermint patties.  Let them cool for a few hours (better yet, once you can safely handle the pan, refrigerate them for an hour or so), then cut into delicious squares and serve.
