Tuesdays At The Table - Impossibly Easy Quesadilla Pie

Hola chicas! You guessed it - it's time for Andrea's weekly blog party!! I'm in a Mexican food mood today, so I'm sharing one of my quickest (and easiest) Mexican meals.

Impossibly Easy Quesadilla Pie

1 can (4.5 oz) of chopped green chiles, drained well
2 cups (8 oz) of shredded Cheddar cheese
1 tsp of chopped fresh cilantro
3/4 cup of original Bisquick mix
1 1/2 cups of milk
3 eggs

Grease a 9-inch pie plate and sprinkle chilies, cheese and cilantro into the pie plate. Stir all other ingredients in a bowl until well blended and then pour into pie plate.
Bake 25-30 minutes at 400 degrees (a knife inserted into the center will come out clean). Cool for a few minutes and serve with salsa and sour cream.

  1. That does sound good : ). And easy, just like you said! I will look for the Red Tent! I just LOVED Water for Elephants so much. I can't get over how excellent it was. I am glad you liked it too!

  3. Ooh girl, this is definitely a keeper!!!!! I can even imagine it being good if you add ground (cooked) meat to the mix! Yummy!!!!!!! I think I'll get the ingredients for this when I go food shopping tonight! Thanks so much for sharing.
